What I came up with was spicy and slightly sweet. JT loved it, and I thought it was rather good myself.
my Chicken Tortilla Soup
2 skinless, boneless chicken breasts (I used about 8 tenderloins)
1/2 teaspoon vegetable oil
1/2 teaspoon ground cumin

1/2 teaspoon onion powder
(i coated the chicken with this spice mix)
2 (14.5 ounce) cans chicken broth
1 cup frozen corn kernels
1/2 teaspoon minced garlic
1 cup chopped onion
1/2 teaspoon chili powder
1 can diced tomatoes
1 cup chunky salsa (I used half habenero and half black bean and corn)

1 can black beans rinsed and drained
1 teaspoon salt

8 ounces corn tortilla chips
1/2 cup shredded Monterey Jack cheese (optional)

Coat Chicken in Spices and in a large pot over medium heat, saute the chicken in the oil for 5 minutes.

While chicken in cooking add the broth, corn, onion, chili powder, diced tomatoes, black beans, garlic, brown sugar, salt and salsa to your slow cooker. Add your cooked chicken to slow cooker and go on with your day. Cook on High for 6-8 hours. Top with the Monterey Jack cheese, tortilla chips and avocado. Enjoy.
I made beer bread to accompany this dish. I am not a drinker at all, and infact I have never even tasted a beer it isn't drinkable form. But I do cook with it, and I think this is one of the yummiest breads. My hubby loves it too. I got the recipe here.

3 cups flour

1/4 cup butter (don't use margirane for this it doesn't taste right)

Preheat oven to 375 degrees.
Mix dry ingredients and beer.
Pour into a greased loaf pan.
Pour melted butter over mixture.
